The original area of production of the Peperone di Senise presents pedo-climatic characteristics which are adapted to the cultivation needs of the red pepper; this obviously makes this area dedicated to the production of this vegetable. The Peperoni di Senise are different from the products of the same species for the particular conditions of the soil and the environment of the area of production, which give prestigious and high quality characteristics to the product.

 

Consumption

The Peperone di Senise has important properties which stimulate digestion and glandular secretion, and can be served fresh or together with local cheeses of typical smoked hams.

The Peperone di Senise has a thin thickness and a low content of water, and for this reason is easy to dry, exposing it to the rays of the sun. The stipe is not separated from the berry even after the drying phase, so that it is possible to tie the peppers together to complete the characteristics 'necklaces'.
