Gavi o Cortese di Gavi Docg

Produced in the types Tranquillo, Frizzante and Spumante, the Gavi DOCG or Cortese di Gavi originates exclusively from the Cortese grapes, locally known as 'Courteis'. Although its origins are ancient, there aren't many news on the vineyard. The first references are found in the ampelography of Count Nuvolone of 1789, but news regarding the quality of the wine produced in these vineyards fate back to the end of the 19th century.

 

Consumption

The Gavi DOCG in its three types, can be served with well structured preparations: cold hors d'oeuvres such as green peppers with anchovies, rabbit salads, cold-cuts. It also accompanies brilliantly fish based dishes served with mayonnaise, roast beef, pasta dishes and risottos with fish and crustaceans. In the area of production it is traditionally accompanied by the 'tajarin al tartufo', a kind of pasta served with truffle sauce, parmesan cheese and butter. The wine must be served at a temperature of 12-14°C in calices for white wines. The Spumante is served in glasses known as 'Flute' and at a temperature of 8°C.

Each label must carry a mention of the Controlled and Guaranteed Denomination of Origin besides all the other indications foreseen by law, such as: The determined Region from which the product originates; Denomination of the product composed of the combination of the variety of vine from which the wine originates and the geographic area in which that variety is cultivated; Nominal volume of the wine; Name or company name of the bottler and its registered address; Number and code of the bottler, which may also appear on the closing system (cork or cap); Name of the Country; Indication of the batch; Ecological indications.

Description
It is exclusively obtained from the grapes of the Cortese vineyards.
Characteristics
On eye examination the Gavi DOCG Tranquillo is of more or less intense pale yellow colour; it has a delicate smell, the taste is dry, pleasant, fresh and harmonic. It has a minimum gradation of 10,5°. The Gavi DOCG Frizzante has a limpid, pale yellow colour, the taste is dry, pleasant and fresh and harmonic and a gradation of 10.5°. Finally, the Spumante type is also pale yellow in colour, and the froth is fine and persistent. The smell is delicate, characteristic, harmonic, dry and pleasant. The minimum gradation must be 10,5°C.

This includes the districts of Serravalle Scrivia, Gavi, Arquata Scrivia, Carrosio, Bosio, Parodi Ligure, San Cristoforo, Capriata dOrba, Castelletto d'Orba, Francavilla Bisio, Pasturana, Tassarolo and Novi Ligure, all in the province of Alessandria
