Recioto di Soave Docg

The Recioto di Soave was the first wine of the Veneto region to gain the denomination of controlled and guaranteed origin. The term 'recioto' derives from the dialect 'recia' and indicates the top, and most nutritious part and the most exposed to the sun of the bunch of grapes of the Garganega vineyards, from which this DOCG is produced. The Recioto has very ancient origins: the first documentations date back to the 5th century when Cassiodoro, a wise minister of King Theodoric, and in one of his epistles mentions such wine. The Recioto di Soave DOCG is a wine which is served at the end of meals and produced also in the Spumante type.

 

Consumption

The Recioto di Soave Docg is best served with cakes made from unleavened and consistent dough; in particular with dry cakes, jam tarts and apple pies. It is served in medium chalices in the shape of tulips at a temperature of 10-12°C five years after vintage. The Recioto di Soave DOCG is delicious when served with the classic pandoro di Verona and with dry cakes, in ample ballon chalices and at a temperature of 18-20°C.

Each label must carry a mention of the Controlled and Guaranteed Denomination of Origin besides all the other indications foreseen by law, such as: The determined Region from which the product originates; Denomination of the product composed of the combination of the variety of vine from which the wine originates and the geographic area in which that variety is cultivated; Nominal volume of the wine; Name or company name of the bottler and its registered address; Number and code of the bottler, which may also appear on the closing system (cork or cap); Name of the Country; Indication of the batch; Ecological indications.

It is obtained from grapes deriving from the Garganega vineyards, but can also be produced from other grapes of the Pinot bianco, Chardonnay and Trebbiano di Soave vineyards up to a maximum percentage ofl 30%
Characteristics
On eye examination the Recioto di Soave DOCG is golden yellow in colour which is more or less intense; the smell is pleasant, intense and fruity (the typical smell of the Recioto di Soave derives from the mould formed when the grapes are at rest); the taste is sweet, velvety and harmonic. The minimum gradation is of 14°. The Recioto di Soave DOCG Spumante version has a fine and persistent froth; the colour is yellow and the smell is pleasant, intense and fruity. It includes part of the areas of Soave, Monteforte d'Alpone, San Martino Buon Albergo, Mezzane di Sotto, Roncą, Montecchia di Crosara, San Giovanni Ilarione, Cazzano di Tramigna, Colognola ai Colli, Illasi and Lavagno, in the province od Verona
