The oil produced in the area of Canino has always been famous for its quality, its therapeutic properties, which are explicated especially in the prevention of thrombosis. The cultivation of olives in this area dates back to the Etruscans, who has drawn scenes related to the picking up of olives on vases and frescoes; but this tradition is also witnessed by the presence of secular plants of majestic dimensions, which have characterised the hills of this area. The cultivation of olives has had a new impulse as from the Fifties, when the land reform expropriated Prince Torlonia of the land to give it to the farmers: this fact, together with the creation of social cooperative oil mills and the various private situations have given life to the first significant economic results in the area, expanding the product to a more ample market for the first time.

 

Consumption

Due to its fresh fruity taste, the Canino extra virgin olive oil is perfect on vegetables and minestrone, but also on other dishes. Its optimal resistance to high temperature also makes it an deal product for frying.

The labeling of Canino Dop

The label on the product displays the indication of the denomination "Dop Canino" possibly accompanied by the European Community’s Denomination of Origin logo.

The extra virgin olive oil is obtained from the varieties of olives: Caninese, Leccino, Pendolino, Maurino and Frantoio which are present in the olive grooves, wither on their own or together, up to 100%
Description
The olive oil has a maximum acidity of 0,50%, it has a greenish-emerald colour with golden reflections and has a fruity pleasant smell which reminds of fresh, healthy fruit, picked on maturation

The area of production is situated in the Province of Viterbo and includes the administrative area of the following districts: Canino, Arlena, Cellere, Ischia di Castro, Farnese, Tessenano, Tuscania and Montalto di Castro
