The origins of Castelmagno are very ancient: its name is linked to the sanctuary dedicated to San Magno, a Roman solder martyr in the province of Cuneo. Legend has it that in 1200 the possession of some shapes of Castelmagno was a reason for the war between Cuneo and Saluzzo which lasted 30 years, the same number as the forms of the cheese produced.
The Castelmagno is delicious in the preparation of soups or pasta dishes; it is also delicious with honey and with red wines.

On the flat side of the cheese is a label in the shape of a four-leaf clover bearing the authorized protection consortium mark depicting a stylized "C" with a sketch of alpine peaks. Beneath the mark is the European Community Dop identification logo.
