The fourth edition of the olive oil showcase "Olio Capitale - Salone degli oli extra vergini e di qualità," the specialized trade fair organized by FieraTrieste S.p.A. in collaboration with the Association, Associazione Nazionale Città dell'Olio, will be held from the 5th to the 8th of March, 2010 in Trieste.
In just four years, the event has become an international point of reference for the sector. Visitors have the chance to taste the best olive oils produced in Italy and abroad. For the producers and all the businesses operating in various capacities in this sector, Trieste's geographical position makes it the capitol of Friuli Venezia Giulia and a strategic centre looking towards the market places of central eastern Europe and the new markets opening up to extravirgin olive oil.
The numbers of the last edition make the size and import of this event very clear. Fiera Trieste used a good 4,600 square meters of exhibition space and there are plans to increase the space for the next edition. The number of exhibitors has grown by 41%, while a thousand meetings were held with buyers from Austria, Finland, Germany, Norway, Holland, Poland, Czech Republic, Slovak Republic, Rumania, Switzerland, Hungary and the USA. The Olio Capitale event also hosts the competition "Concorso Olio Capitale," organized in collaboration with Teatro Naturale, which recorded a record 262 labels at the last edition, as opposed tothe 113 labels recorded in 2008.
The data gives a very clear idea of the import of this exhibition, which has quickly turned into a major event. At Olio Capitale, thanks to the numerous Conventions and meetings, the new marketing strategies, critical and strong points of the market, and new production techniques are studied and presented by experts.

An increasing number of restaurant owners come to Trieste to learn about the latest developments in the market, and be able to give their increasingly more demanding and expert customers a good selection of olive oils. In fact, for the restaurant owners, a number of meetings with the great Italian and international chefs have been organized. Through the preparation of a number of dishes, they explain the proper parings between food and extra virgin olive oils depending on the oil's intensity.
